Hi all. I have a Xerox 820 Computer with dual Shugart SA850 8" drives. I'd like to confirm one of these HxC Floppy emulators will work? I assume I will have to use a 34-50 pin adapter such as this.

No, the Dbit adaptor does the opposite. It allows you to connect a real 8" drive to a machine with a 3.5 or 5.25" disk controller/connector.
You will need something that allows a 3.5 or 5.25" drive (in your case the Gotek/HxC) to a machine (the Xerox 820) with an 8" disk controller. I use this: https://oshpark.com/shared_projects/Hr1FTWxB and have had good success with it being used to replace SSSD SA800 and DSDD NEC 8" drives.
